La evolución de los usos del suelo revela la manera en la que los grupos humanos manejan los recursos naturales y modelan sus paisajes rurales. La explotación sistemática de las minutas cartográficas realizadas por el Instituto Geográfico y Estadístico en los años setenta del siglo XIX, nos permite conocer la distribución de usos y coberturas en unas décadas decisivas para la historia agraria provincial, pues suponen el inicio de los procesos de especialización productiva que acabarán por concretarse en una simplificación extrema, con el olivar como protagonista más destacado.

The evolution taken place regarding the uses of the land reveals the way in which human groups manage natural resources and shape their rural landscapes. The systematic exploitation of the cartographic minutes carried out by the Geographical and Statistical Institute during the 60s, in the 19th Century, allows us to know the distribution of uses and coverage in those decades that were decisive for the provincial agrarian history, since they represent the beginning of the specialization in the productive processes that will eventually materialize in an extreme simplification, with the olive grove as the most prominent protagonist.
